Seafood Casserole


Seafood casserole is a delicious, easy-to-make dish that is sure to please. It combines all of your favorite seafood ingredients in one savory dish. The family knows to expect a great meal when Seafood Casserole is on the menu. To make this dish, all you need are some fresh shrimp, imitation crab meat and white fish fillets. It’s easy enough for a weeknight but fancy enough for company for Sunday dinner.


Start by sautéing raw shrimp and diced scallops in butter until they are lightly browned. In a separate bowl, pour in a can of cream of mushroom soup, add a package of frozen mixed vegetables, two cups of cooked rice and the remaining seafood. Stir until mixed evenly. Add seafood. Season with salt and pepper along with Old Bay Seasoning and pour into a greased baking dish. Top off with shredded cheese and bake in the oven for about 30 minutes or until bubbly.


Ingredients

1 lb. raw Shrimp, tail on is optional

1/2 lb. raw Scallops

3 Tbs Butter

1 can Cream of Golden Mushroom Soup

1 - 10 oz bag frozen mixed Vegetables

1/4 cup Heavy Cream

2 cups Rice, cooked

1 tsp Old Bay Seasoning, or to taste

Salt and Pepper to taste

1 cup Shredded blend of Mozzarella and Provolone cheese


Directions are above.


Hint: In place of the more expensive Scallops, try using imitation crabmeat.

In place of rice, try cooked noodles.
